The Flying Apron bakery is Seattle’s only organic, gluten free, and vegan bakery. They use the freshest natural ingredients that are free of harmful, unnecessary chemicals, animal products, gluten, and wheat. The group will speak with the owner of Flying Apron, tour their gluten free factory and hear about small business marketing strategies.

The Essential Baking Company was founded in 1994 by the late Jeff Fairhall and George DePasquale.  Fairhall also founded Theo Chocolates, the countries first organic, fair-trade chocolate manufacture. The Essential Baking Company sells organic bread, pastry, and desserts throughout the Seattle Puget Sound area including grocery stores, cafes, restaurants, schools and hospitals.  The group will tour the bakery and speak with an Essential Baking Company representative who will discuss getting product into schools and hospitals.

Costco

In 1983, the first Costco warehouse location was opened in Seattle, WA, U.S.A. Costco became the first company ever to grow from zero to $3 billion in sales in less than six years. As of July 2009 it is the third largest retailer in the United States, where it originated, and the ninth largest in the world. As of October 2007, Costco is the largest retailer of fine wine in the world.  Each Costco has an in-house bakery which makes bread, cakes, cookies, bagels and candies in mass scale.  The group will tour the in-house bakery of the first Costco location in Kirkland, Washington and learn about mass production of quality goods.

Confectionaries

Theo Chocolates is the first and only organic and Fair Trade chocolate factory in America.  Before Theo, all organic chocolate was manufactured in Europe and imported into the US market.  The group will take a tour of the factory, have samples of the chocolate and speak with representatives about the role of fair-trade and organic products in their prices.  Also, the group will discuss the history and science of chocolate, where Theo sources their beans, the benefits of organic, fair trade and what they mean. 

This session supports the following program goal(s):  The role of organic and fair-trade products in business models as well as reaching those seeking “high-end” goods.

Liberty Orchards is a candy company located in Cashmere, Washington. Founded originally as an apple farm in 1918 by two Armenian immigrants the company moved into canning and then confectionery during the 1930s and 1940s. Their products include a variety of jellied fruit candies resembling Americanized versions of Turkish Delight.  The group will take a tour of the large factory and see how candy is produced en masse.  They will meet with a representative of the company to talk about mail-order business as well as nation-wide distribution.

Brown & Haley is best known for their Almond Roca product which is available in 63 countries in Europe, Africa, South America, Australia and Asia.  Brown & Haley have a tradition of innovation when it comes to developing their candy products.  The group will take a tour of the original factory and speak with a representative about production on an international level, quality assurance processes, proprietary production capabilities, and state-of-the-art packaging equipment.
